Menu Maker: Recipes from Class 5 at West Twyford

Baba Ganoush

A fresh starter from the Middle East, mixed in a food processor.

Serves up to 4

Ingredients
1 large or 2 small aubergines
4 cloves of garlic
4 Tbsp. tahini
1 lemon
salt

To serve
2-3 sprigs of parsley, chopped
1 packet pitta bread

Method
1. Prick the aubergines all over and grill, turning frequently, until the skin is charred all over.
2. Remove the skin, rinsing in cold water.
3. Fit the metal chopping blade in the food processor and place the aubergines in the bowl.
4. Season with salt to taste
5. Process until smooth and transfer to a serving dish.
6. Sprinkle with the parsley and serve as a dip with pitta bread

Makes about 200ml (1/3 pint)
