Tommy's Amazingly Fast Pizza

Faster than a take-away pizza! You have heard of deep pan pizza, well here is frying-pan pizza.

Makes 4 gentle portions or 2 for healthy appetites (but easily doubled). Smaller portions make a good starter

V (option)
M or S (see abbreviations)

Ingredients
1 cup self-raising flour
¼ cup oil
½ tsp salt
hot water to make a stiff dough (but not sticky)

Topping
1 tin ratatouille
Mozzarella or grated cheese of your choice

Method
1. Sift the flour and add the salt and oil. Mix well.
2. Add the water slowly, to be sure that the dough does not become sticky
3. Heat the last Tbsp. oil in a 9inch (23-25cm) frying-pan
4. Pat the dough into a flat circular shape and place in the pan. Cook for about five minutes until brown. Slide onto a plate and turn onto another plate.
5. Slide the pizza base back into the pan, uncooked side down. Cook for a further five minutes.
6. Remove from the stove and spread with the ratatouille and top with cheese.
7. Melt cheese under the grill

Flexible: Of course you can add any topping of your choice, either to the ratatouille or replace the ratatouille with home made tomato sauce or 2 Tbsp tomato puree.
