Mohamed's Marvellous Minis

These delicious sweet cakes from Somalia are so tiny that you can always eat one after even a big meal. But could you ever stop after one? When Mohamed’s mum brings these in the classroom becomes a clamour.

Ingredients
(Have the ingredients at room temperature)

500 g self-raising flour
2 eggs
2 tsp. vegetable oil
250 mg sugar
7 g yeast
1 cup milk

Method
1. Mix the flour, sugar, eggs and oil in a bowl,
2. Mix the milk, salt and yeast in a cup and add to the bowl.
3. Cover the bowl and leave in a warm place for about 30 minutes
4. Roll the dough into pieces a little larger than a marble.
5. Pour some oil into a pan and fry the ‘marvellous minis’ until golden
6. Roll in sugar and serve.
